Method
- Combine sugar, corn starch, and salt in a large saucepan, whisking to blend thoroughly. Add half and half and egg yolks, whisking until smooth. Place over medium-high heat and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
- Remove the pan from heat immediately. Whisk in the heavy cream and vanilla extract until fully incorporated. Transfer to a container and refrigerate for several hours or overnight until completely chilled.
- Pour the chilled custard mixture into your ice cream maker container. Add whole milk up to the 4-quart fill line. Churn according to your ice cream maker's instructions until the mixture reaches a soft-serve consistency.
- When the ice cream has thickened, fold in the chopped Snickers candy bars. Add chopped cherries at this point if desired.
- Pack the ice cream maker with additional ice and rock salt. Allow to sit for at least two hours to firm up before serving.
Notes
For smaller ice cream makers, divide all ingredients by 3 for a 2-quart machine or by 4 for a 1.5-quart machine.
The maraschino cherries are optional and can be served on the side for individual customization.
Store finished ice cream in airtight containers in the freezer for up to two weeks.
